3 Cheese Stuffed Manicotti

This is a favorite for both my husband and the kiddos, it’s pretty easy and awesome for leftovers.

What you will need:

1 box of Manicotti Shells {I like Barilla} cooked al dente

1 each of Red and Yellow peppers seeded and finely chopped

1 can of white crab meat {feel free to use the real stuff!}

1 egg

1 12 oz container of Ricotta Cheese

2/3 cup Parmesan or Formaggio Cheese

1/3 cup Parmesan for topping

1/4 cup Blue Cheese

Dash of salt and pepper

Sauce:

4 tbsp butter

4 tbsp flour

4 cups milk

3/4 cup Parmesan or Formaggio Cheese

1 tsp Seasoning Salt (Lawry’s)

1 tsp Pepper

Heat your oven to 350 and grease a 9×11 baking dish. While your pasta boils for roughly 7 minutes (until al dente), start mixing your filling. Combine the Ricotta, peppers, crab meat, and cheeses, then beat your egg and add that too. Add the dash of each salt and pepper and you’ll be ready to fill your manicotti shells. Fill each shell and arrange in the 9×11 baking dish. Set aside.

To start the sauce we’re going to make a rue with butter and flour. Once that melts together smoothly over low to med, stir in your milk slowly over medium heat. Bring to a slow boil over med to high and once your sauce starts to thicken reduce to low. Add in cheese, salt and pepper and remove from heat.

Drizzle the sauce over the Manicotti and sprinkle the Parmesan over the top. Cover with aluminum foil for 30 minutes, remove foil and bake an additional 10 minutes without foil. Remove and let cool for 10 minutes.

Unfortunately I was not able to capture images of the finished project as we were serving company on this particular evening. I will tell you that it is always a major hit and another plus is that it passes as vegetarian {so long as you’re not vegan!}. Enjoy!

Homemade Laundry Detergent Makes Me Smile

I’m trying to be more frugal. It can be so hard to clip coupons, make your own this and that, but it is totally worth it. I keep seeing and hearing about everyone making their own laundry detergent and I kept convincing myself that it was not for me. After all, I’ve always been pretty faithful to Tide just for the way my clothes smell after they’ve been washed. Not to mention the first few recipes I came across involved melting and stirring and whole lot of  steps I knew I wouldn’t commit to. It wasn’t until I came across this recipe that I decided it’s worth a shot, especially since the grand total costs less than 1 jug of Tide and is supposed to last much longer.

Ingredients:

ONE 4 lb box of Borax

ONE 4 lb box of Pure Baking Soda

ONE 55 oz box of Arm & Hammer Super Washing Soda

3 bars of Fels Naptha Bar soap or Pink Zote grated

*Optional {I added this} 2.5 lbs Oxy Clean, just because I add this to my washing cycle anyway

I lined a metal bin of sorts that I had laying around with a garbage bag and dumped all of the ingredients in. This took a total of maybe 10 minutes and 9 minutes and 45 seconds of that was occupied by the grating of the Fels Naptha. Then I used a large bamboo spoon to kind of sift it all around. When I finally got over my fear that the garbage bag wouldn’t split open if I lifted it out, I did just that and mixed it by moving it in a back and forth kind of motion making sure that it was all combined.

At one point Rob came in, afraid for my sanity I’m sure, because he watched me grate the Fels Naptha and it looks just like a block of cheese.

I’ll store the bulk of it in the garbage bag, but am using a re-purposed Oxy Clean container to store above my washing machine.

Most articles I read say to use 1 tbsp/load, but I am using 2 tbsp/load in my HE washing machine. Speaking of HE washing machines, if that is what you’re using, make sure to put your scoop of detergent right in the barrel before loading your linens/clothing.

I’ve officially finished 2 loads using this and am so incredibly pleased. 1.) It took out this stain, without any stain lifters from Olivia’s Mattress Pad. This stain was caused by an exploding gel ice pack and I really wasn’t certain it would come out at all. 2.) My clothes and sheets smell like a fresh spring day and are so soft yet crisp. I’m definitely using this from now on.

Our third baby and second daughter Charlotte, or Charlee, as we’ve been known to call her has arrived. She weighed 7 lbs 13 oz and is a perfect mix of looks between her brother and sister if you ask me. We are all absolutely smitten with her, even the dogs.

5 tips for editing and creating beautiful digital photo projects {Holiday Gift Guide}

I’ve been using Adobe Photo Shop for around 2 years now. I started with PSE-Photo Shop Elements and am now using CS4 Adobe Creative Suite 4. There are so many fun ways to edit your photos ranging from simple to crazy and I’m going to share a few of my favorite tips with you.

1. Get rid of that pimple (or other blotchiness on the face)! This is a pretty simple one, but one worth going over. There are two ways I like to do this depending on the size of the pimple, food smear, etc. The first way is with the Spot Healing Brush. I use this for one or two little spots that need repairing. You can adjust the brush size and it will do the rest for you by using proximity match. Now if I’m doing a photo session where a child is supposed to remain clean and they end up with food or dirt all over their face I will use a soft brush to eliminate anything that doesn’t belong. I simply match the color of the skin with my dropper tool closest to where the food appears and then go over with a soft brush at 10-15% opacity. I also use this method with dark under eye circles. See the image below, I took out dark circles and couple small blemishes, but it still remains natural looking.

2. Remove an unwanted object. The easiest and quickest way is by using your Spot Healing Brush, Clone Brush or in some instances your Soft Brush you can remove most unwanted objects. In some cases where the object is larger or in an awkward spot you may have to use a copy and paste method. When you choose your Spot Healing you simply paint over the unwanted area and let Photo Shop work for you or if you choose your clone brush you right click on the area you want a particular area to look like and then you paint over the said area. You have the ability to choose the opacity and brush size depending on what you’re cloning out. If you look at the image below you will see in the top left corner where there is a house peeking above the trees that I cloned out.

3. Turn your photos into your personal style. What might make one photographer stand out among another is their style. Some of this is done right out of the camera and some of it is in the processing. Someone might prefer a more vintage feel and another might prefer their images a little brighter. With Photo Shop Elements you can make your style stand out by trying different black and white techniques, adjusting the brightness, contrast and more.

4. Bump up those curves. I prefer to change my brightness in most cases by using curves instead of the brightening slider. In Photoshop Elements you can achieve this by going to Enhance > Adjust Color > Adjust Color Curves. From there I raise my midtone curves. See the image below for a photo brightened with curves instead of brightness.

pse35. Brighten your eyes and teeth. This is something you don’t want to get too carried away with by risking an unnatural look. For the eyes I find it easiest to select the eye area with your quick selection brush and then to brighten and contrast that area just a smidge. After reaching the desired look I apply a gaussian blur while the eyes are still selected to make it all blend together. For the teeth you can choose your dodge tool at a very light opacity, about 10 and brush over them once. Personally, I rarely touch the teeth, but you can see in the image below how I adjusted the eyes.

I can’t put my finger on it, but as a mother of a little girl I have to admit there is something very magical almost about our relationship. We butt heads because she is so much like me, yet we are bound tight and will be forever because we share what no boy possibly could. I love that she loves pretty things, likes to dress up and get her hair done. Most of the time. I look forward to each season so I can dress her accordingly and throw in the one type of prettiness that lasts all year long, her Pettiskirts and Tutus. They are just too much fun to mix and match with seasonal clothing, one could be worn by itself in the summer with a tank top and then over legging in the fall and winter. Not to mention how stinkin’ adorable they are for photo sessions.

Now it seems like there are a lot of different places to purchase the mentioned Pettiskirts and Tutus. Olivia slides into hers several times a week, sometimes for a few minutes at a time, sometimes a few hours. Depends on her mood. What I’m getting at here is that even though these are made of delicate, soft material, it has been proven to be quite indestructible. With that said, I do not let her eat messy foods with it on or get too crazy outside as I don’t want it to snag on the wooden play set. After each use we hang it back in her closet with a pants style hanger and it is still just as beautiful as ever.
