3 Cheese Stuffed Manicotti

3 Cheese Stuffed Manicotti

No Comments 30 January 2012

This is a favorite for both my husband and the kiddos, it’s pretty easy and awesome for leftovers.

312

What you will need:

1 box of Manicotti Shells {I like Barilla} cooked al dente

1 each of Red and Yellow peppers seeded and finely chopped

1 can of white crab meat {feel free to use the real stuff!}

1 egg

1 12 oz container of Ricotta Cheese

2/3 cup Parmesan or Formaggio Cheese

1/3 cup Parmesan for topping

1/4 cup Blue Cheese

Dash of salt and pepper

Sauce:

4 tbsp butter

4 tbsp flour

4 cups milk

3/4 cup Parmesan or Formaggio Cheese

1 tsp Seasoning Salt (Lawry’s)

1 tsp Pepper

313

Heat your oven to 350 and grease a 9×11 baking dish. While your pasta boils for roughly 7 minutes (until al dente), start mixing your filling. Combine the Ricotta, peppers, crab meat, and cheeses, then beat your egg and add that too. Add the dash of each salt and pepper and you’ll be ready to fill your manicotti shells. Fill each shell and arrange in the 9×11 baking dish. Set aside.

322

To start the sauce we’re going to make a rue with butter and flour. Once that melts together smoothly over low to med, stir in your milk slowly over medium heat. Bring to a slow boil over med to high and once your sauce starts to thicken reduce to low. Add in cheese, salt and pepper and remove from heat.

317

319

321{I tossed in a little Sharp Cheddar that I had left over as well}

Drizzle the sauce over the Manicotti and sprinkle the Parmesan over the top. Cover with aluminum foil for 30 minutes, remove foil and bake an additional 10 minutes without foil. Remove and let cool for 10 minutes.

323

Unfortunately I was not able to capture images of the finished project as we were serving company on this particular evening. I will tell you that it is always a major hit and another plus is that it passes as vegetarian {so long as you’re not vegan!}. Enjoy!

Homemade Laundry Detergent Makes Me Smile

Homemade Laundry Detergent Makes Me Smile

5 Comments 29 January 2012

I’m trying to be more frugal. It can be so hard to clip coupons, make your own this and that, but it is totally worth it. I keep seeing and hearing about everyone making their own laundry detergent and I kept convincing myself that it was not for me. After all, I’ve always been pretty faithful to Tide just for the way my clothes smell after they’ve been washed. Not to mention the first few recipes I came across involved melting and stirring and whole lot of  steps I knew I wouldn’t commit to. It wasn’t until I came across this recipe that I decided it’s worth a shot, especially since the grand total costs less than 1 jug of Tide and is supposed to last much longer.

117

Ingredients:

ONE 4 lb box of Borax

ONE 4 lb box of Pure Baking Soda

ONE 55 oz box of Arm & Hammer Super Washing Soda

3 bars of Fels Naptha Bar soap or Pink Zote grated

*Optional {I added this} 2.5 lbs Oxy Clean, just because I add this to my washing cycle anyway

119

I lined a metal bin of sorts that I had laying around with a garbage bag and dumped all of the ingredients in. This took a total of maybe 10 minutes and 9 minutes and 45 seconds of that was occupied by the grating of the Fels Naptha. Then I used a large bamboo spoon to kind of sift it all around. When I finally got over my fear that the garbage bag wouldn’t split open if I lifted it out, I did just that and mixed it by moving it in a back and forth kind of motion making sure that it was all combined.

120

At one point Rob came in, afraid for my sanity I’m sure, because he watched me grate the Fels Naptha and it looks just like a block of cheese.

124127

I’ll store the bulk of it in the garbage bag, but am using a re-purposed Oxy Clean container to store above my washing machine.

126

Most articles I read say to use 1 tbsp/load, but I am using 2 tbsp/load in my HE washing machine. Speaking of HE washing machines, if that is what you’re using, make sure to put your scoop of detergent right in the barrel before loading your linens/clothing.

I’ve officially finished 2 loads using this and am so incredibly pleased. 1.) It took out this stain, without any stain lifters from Olivia’s Mattress Pad. This stain was caused by an exploding gel ice pack and I really wasn’t certain it would come out at all. 2.) My clothes and sheets smell like a fresh spring day and are so soft yet crisp. I’m definitely using this from now on.

Total Cost: $16.69 including the Oxy Clean

I’ll update when I know how long my batch lasts.

Back to School with Avocados From Mexico

No Comments 01 September 2010

The Avocado is in the top 5 among my favorite fruits and vegetables that I use on a nearly daily basis. I can simply slice it up for the kids to snack on with a touch of salt and pepper or I can make an extravagant meal using it. And the flavor, is just incredible, it compliments so many other flavors. My absolute favorite snack is guacamole with tortilla chips, but only if it’s homemade.

070

I’m going to share a series of after school friendly recipes using Avocados from Mexico as one of the top ingredients. Not only will your children love these, but you’ll be reassured knowing that they are getting some key nutrients. In the mean time I invite you to browse the Avocados from Mexico website. There is a wealth of information there such as how to purchase an avocado or how to tell if it is ripe. There is a spot for kids and of course numerous recipes.

Tomorrow will be Avocado Mac N Cheese!

Breyers Smooth and Dreamy-Review and Giveaway

You know it’s been a rough summer when I’m asked if I would like to review any product made by Breyers, particularly their new Smooth and Dreamy Ice Cream Bars. It’s been hot here and humid, really humid. Like, 100% humidity if you ask me. I like water to cool me off about as much as the next guy, or gal, but can only take so much. Speaking of only being able to take so much, how many artificially flavored fruit popsicles can you really eat before you’re sick of them? What about a cool treat for me when the kids are napping? Or out riding their bikes with the neighbor kids?

002

The new Breyers Smooth & Dreamy ice cream bars and sandwiches prove an excellent treat for me at the end of a long day. With six rich and creamy flavors, including Chocolate Caramel Brownie, Vanilla Caramel Chip, Chocolate Chip Cookie Dough, Chocolate Covered Strawberry, Vanilla Fudge Brownie, and Triple Chocolate Chip, Breyers Smooth & Dreamy bars and sandwiches offer something for everyone. And with no artificial flavors or colors, 160 calories or less and 4-6g of fat per serving, and delicious mix-ins and swirls, these bars and sandwiches make for refreshing snacks and desserts.

We’ve tried several of these flavors now and have been completely satisfied with each. The title fits these exceptionally as they are truly Smooth and Dreamy. My ultimate favorite so far is the Triple Chocolate Ice Cream Bar. Rob won’t touch these ones, he’s not a big milk/dark chocolate kinda guy, so as long as I can keep them out of the sights of my children I get the whole box to myself. The Vanilla Caramel Chip has become an all around family favorite, there’s no getting this box past anyone and it will generally only last 24-36 hours in our house.

004

You can browse the Breyers Smooth and Dreamy website at smoothanddreamy.com. You will find all of the different flavors here as well as a few more perks. You can enter the 2010 Scoop Off . You can play the Wheel of Delights, find recipes and much much more.

As a mom, and I’ve said this before in a few other posts, I do whatever I can to make sure my family consumes foods that are good for their bodies. I like to do this without breaking the budget, so I am known for scouring the grocery ads every Sunday and planning our meals around what’s on sale and good for us. Fortunately for all of us, John Morrell & Co have come out with an Allergen Free line and it is quite affordable if I do say so myself. I know it can be difficult at times to find appropriate foods when dealing with certain food allergies, and now John Morrell & Co can offer:

  • No Milk
  • No Fish
  • No Soy
  • No Egg
  • No Nuts
  • No Wheat

We’ve tried several varieties of their meats, in the past and more recently. The whole family has always enjoyed what they’ve tasted. They offer quite a large variety and what I love that is that most everything they offer is super easy to prepare and to plan a meal around. Of their allergen free meats you have Hot Dogs, Bologna and Smoked Sausages to choose from.
