This is from my dear friend Amanda. Everybody, unless allergic to one or more of the ingredients, has to try this at least once. I can almost guarantee you will make it over and over again after.

Ingredients:

  • 1-1.5 lbs ground beef
  • 1.-1.5 small cans tomato sauce
  • 8oz sour cream
  • 8oz cream cheese
  • 1 small box lasagna noodles (I use Barilla No Boil)
  • Small chopped onion
  • Garlic salt
  • Mozzarella & cheddar cheese

Directions:

Brown beef, drain, add salt and pepper and tomato sauce, simmer 20 minutes

Mix sour cream, garlic, onion, cream cheese in a bowl

layer: Noodles, cheese mixture, meat mixture, noodles, cheese mixture, meat mixture, top with mozzarella and cheddar cheese.

A fun add in is Jalapenos. I also like to top it with chopped black olives, tomatoes or green onion before baking!

Bake @ 350 for 30-35 minutes.

This recipe is actually one that I received from a friend of mine, Valerie. It’s been a family favorite. Super easy, everyone loves it, and there are plenty of leftovers for the next day or two.

Ingredients:

1-2 lb hamburger meat, browned and crumbled

2 cans whole kernal corn niblets

2 cans diced tomatoes

2 cans ranch style beans

1 pkg ranch dressing mix/seasoning

1 pkg taco seasoning

1 small onion (optional)

Toppings (Optional):

Shredded Cheese

Jalepeno

Sour Cream

Tortilla Chips

Directions:

Mix all ingredients together.

You can choose to add 1 or 2 cans of water if you prefer it a little more “soup-ier”, or leave it thick. Bring to a boil and then turn down to low-med for about 15 minutes.

Serve with your choice of toppings. That’s it! A delicious dinner in no time!

This is yummy, quick, and I think pretty good for you. Not too fattening at all as far as I’m concerned, and it has fresh veggies, protein and carbs all packed into one dish.

Ingredients:

  • 1 lb boneless skinless chicken breast
  • 5 tablespoons honey (I might have thrown in 6 actually, so this depends on taste)
  • 2 tablespoons vinegar
  • 4 tablespoons lemon juice (fresh, or not)
  • 4 teaspoons soy sauce
  • 2 teaspoons flour
  • 2 tablespoons Olive Oil
  • 4 cups cut up vegetables (I used broccoli, carrots and leeks.  Other good options: Sweet Onion, mushrooms, onion)
  • 2 cups hot cooked white rice

Directions:

  • Cut chicken into strips and set aside. To create the sauce, mix together honey, vinegar, lemon juice and flour and set aside.
  • Pour Olive Oil into a wok, or a large skillet will do also. Heat over Medium heat. Add vegetables and cook for 3-4 minutes or until the vegetables are tender yet crisp. Remove vegetables and set aside. Add the chicken to the wok and cook for 3-4 minutes or until the chicken is no longer pink. Stir in the sauce and cook until thick.

  • Add the vegetables back in to your chicken and sauce mix. Cook all until well coated.

Yoplait Frozen Smoothies and a Giveaway

I have always been a lover of a good smoothie. No doubt about it. I hesitate though when it comes to actually making them at home. Sure they’re tasty and nutritious, but if you’ve ever made one at home you know how messy it can get. Not to mention the amount of ingredients you have to put together to make it just right.

With much thanks to Yoplait I can now concoct smoothies for two (or more) in less than 2 minutes and using only the package they sell in the freezer aisle and a cup of milk. Each Yoplait smoothie contains a full serving of fruit and the frozen yogurt pieces already in the package contain your live and active cultures. Let’s not forget about the calcium and vitamin C each contains as well. The taste is incredibly creamy and fruity at the same time. My favorite flavor has been the Very Berry, but there are others to choose from as well.

Each member in our family loved these for different reasons. Personally, I am horrible about eating breakfast. This smoothie is a perfect solution for me opposed to the cup (or 3) of coffee I normally consume for breakfast. For the kids this has been a great solution for afternoon snack. Ryan is always starving when he gets home from school, but I never want to give him too much to eat because then he won’t eat his dinner. One package of Yoplait Smoothie after school makes enough for Olivia, Ryan and a little for myself as well. This gets them another serving of their fruit for the day and it fills them up enough until dinner, but not too much.

Again, they are easy to prepare. You can make these in any blender, however I’ve been making mine in a single serve blender that has just enough space to prepare one package of Yoplait smoothie.  This makes 2-3 glasses of smoothie for kid sized portions.  All you do is poor the ingredients from the package into the blender followed by your 1 cup of milk and blend for 1.5 minutes. It’s then ready to serve and any leftovers can be stored in  your refrigerator.

_MG_9671It is not unusual to find us preparing or eating Breakfast for dinner on any given night. Pancakes, Sausage (from our favorite meat market) and fruit are what you would find on the menu. The kids? They inhale all of it. Sometimes I use the box mix, Krusteaz specifically, you know, where you just add water.  Most of the time though, I will go all out and make them from scratch. We choose pancakes the majority of the time because it is easy to double the recipe creating a quick and easy snack the next day or two. Or you could freeze them and pop them in the toaster for breakfast. There is one recipe that we all love, but I have not been given permission to share as it is a family recipe of a good friend of mine. However, I came across this gem of a pancake recipe. The two are quite similar. These are are perfectly fluffy and delicious all around. We don’t stop at just the pancake though, we always have to add something to it. Usually fruit or chocolate chips. One of Ryan’s favorite fruits to add are the bananas. He likes cutting them all up. I consider this an easy way to get the kids involved and add a little more nutrition.

_MG_6341This is one of my favorite appetizers to bring to gatherings for a dish to pass. I don’t think I’ve found one person who  does not like this.

What you need:

  • 2 containers of crescent rolls, I use Original
  • 1 Block, 8 oz., of Cream Cheese
  • 1/3 cup of Sour Cream
  • 1 packet of Hidden Valley Ranch Dip mix
  • 1/4 cup broccoli chopped
  • 1/4 cup of tomato (I like cherry tomatoes for this) chopped
  • 1/4 cup chopped green, yellow or red pepper
  • 1/4 cup of Green Onion
  • 3 tablespoons of Shredded Carrots
  • 1/4 shredded sharp cheddar cheese

(Substitutions-You can substitue any of the vegetable above for any you prefer. These listed are my favorite together, however I have been to known to buy the ones on sale and use those as well.)

Start by creating your crust. You will lay out the crescent dough to make a flat surface on a cookie sheet, mimicking a rectangular pizza crust. Stick that in the oven at 350 degrees for 12 minutes._MG_6335

While that is baking you can mix up your “sauce” and cut up your vegetables. The sauce consist of the Cream Cheese, Sour Cream and the Ranch pack. Mix altogether and chill while you’re waiting for your crust to finish baking. _MG_6338

Now you can start chopping your veggies. By the time you are done chopping your crust should be done. I let the crust cool for about 10 minutes and then you can spread your Cream Cheese mixture over the crust followed by the assorted veggies. I then top with the Shredded Cheddar Cheese._MG_6339

Now it is complete! I like to let it chill for at least 1/2 hour before cutting and eating.

What you will need:

2 lbs of ground hamburger or turkey, I chose hamburger

8 large tortilla shells or 16 small tortilla shells

several leaves of lettuce, my favorite is Romaine

2 tomatoes diced

16 oz sour cream

1/2 cup chopped green onion

your favorite salsa or picante

1 cup of shredded cheddar cheese

sliced jalapenos (optional)

1-2 tsp of Franks hot sauce (optional)
