3 Cheese Stuffed Manicotti

This is a favorite for both my husband and the kiddos, it’s pretty easy and awesome for leftovers.

What you will need:

1 box of Manicotti Shells {I like Barilla} cooked al dente

1 each of Red and Yellow peppers seeded and finely chopped

1 can of white crab meat {feel free to use the real stuff!}

1 egg

1 12 oz container of Ricotta Cheese

2/3 cup Parmesan or Formaggio Cheese

1/3 cup Parmesan for topping

1/4 cup Blue Cheese

Dash of salt and pepper

Sauce:

4 tbsp butter

4 tbsp flour

4 cups milk

3/4 cup Parmesan or Formaggio Cheese

1 tsp Seasoning Salt (Lawry’s)

1 tsp Pepper

Heat your oven to 350 and grease a 9×11 baking dish. While your pasta boils for roughly 7 minutes (until al dente), start mixing your filling. Combine the Ricotta, peppers, crab meat, and cheeses, then beat your egg and add that too. Add the dash of each salt and pepper and you’ll be ready to fill your manicotti shells. Fill each shell and arrange in the 9×11 baking dish. Set aside.

To start the sauce we’re going to make a rue with butter and flour. Once that melts together smoothly over low to med, stir in your milk slowly over medium heat. Bring to a slow boil over med to high and once your sauce starts to thicken reduce to low. Add in cheese, salt and pepper and remove from heat.

Drizzle the sauce over the Manicotti and sprinkle the Parmesan over the top. Cover with aluminum foil for 30 minutes, remove foil and bake an additional 10 minutes without foil. Remove and let cool for 10 minutes.

Unfortunately I was not able to capture images of the finished project as we were serving company on this particular evening. I will tell you that it is always a major hit and another plus is that it passes as vegetarian {so long as you’re not vegan!}. Enjoy!

Back to School with Avocados From Mexico

The Avocado is in the top 5 among my favorite fruits and vegetables that I use on a nearly daily basis. I can simply slice it up for the kids to snack on with a touch of salt and pepper or I can make an extravagant meal using it. And the flavor, is just incredible, it compliments so many other flavors. My absolute favorite snack is guacamole with tortilla chips, but only if it’s homemade.

I’m going to share a series of after school friendly recipes using Avocados from Mexico as one of the top ingredients. Not only will your children love these, but you’ll be reassured knowing that they are getting some key nutrients. In the mean time I invite you to browse the Avocados from Mexico website. elbowsIf you are a past reader of Through Hazel Eyes, then you know that I’m always on the lookout for healthy food that doesn’t sacrifice taste. I don’t like lite or non-fat, but I do like to add whole grain and other nutrients in whenever I can. Pasta and I have always had a love-hate relationship. Uncle Ben’s Whole Grain White Rice

Those of us with children have all been there, creating healthy eating habits for our children that they will (hopefully) carry with them through adult-hood. Even if you don’t have children I encourage you to read on, as I’ve found the solution for those trying to be healthier but just want to keep certain foods in their diet, like white rice. Uncle Ben’s accomplished something I wasn’t sure I could believe. They took your white rice and made it whole grain, without really changing the texture, taste or color. It’s now healthier in general with lower fat, a good source of fiber and nearly the recommended amount of daily whole grains.

Personally, I like to change up our dinners, a lot. There is nothing worse than getting stuck in a rut and serving something over and over and over. I am always scouring, re-inventing and experimenting for new ideas that the whole family will enjoy. I also like to get the whole family involved in the preparing process. This not only ensures that my children are more likely to try new things (even with me pressuring), but if they helped with dinner they don’t complain at all when it comes time to eat. On the contrary, there are a few staples that I do use weekly, or sometimes daily. Rice, pasta, garlic, onion, etc… Whenever I can find a healthy alternative for something that we regularly use, that tastes just as good if not the same, we  use it.

I could not be happier to have been introduced to Uncle Ben’s Whole Grain White Rice, as rice is a perfect add in for so many meals to get those carbs and now whole grains in to create the perfectly balanced meal. For my initial review of Uncle Ben’s Whole Grain White Rice I made a simple rice and chicken casserole that in itself is a balanced meal, however I added a salad. The whole family loved it and there was plenty left over for my hubby’s lunch the next day and then some.

Ingredients:

1 cup uncooked Uncle Ben’s Whole Grain White Rice

1 lb boneless skinless chicken breast

1 12-14 oz bag frozen peas

1 can cream of (you insert your favorite kind) of Campbells soup, I used Cream of Chicken

1.5 cups water

1 package Lipton Onion Soup mix

Combine all ingredients and bake covered for 1 hour, remove, remove aluminum, top with shredded cheese of your choice and bake another 10-15 minutes.

This is from my dear friend Amanda. Everybody, unless allergic to one or more of the ingredients, has to try this at least once. I can almost guarantee you will make it over and over again after.

Ingredients:

  • 1-1.5 lbs ground beef
  • 1.-1.5 small cans tomato sauce
  • 8oz sour cream
  • 8oz cream cheese
  • 1 small box lasagna noodles (I use Barilla No Boil)
  • Small chopped onion
  • Garlic salt
  • Mozzarella & cheddar cheese

Directions:

Brown beef, drain, add salt and pepper and tomato sauce, simmer 20 minutes

Mix sour cream, garlic, onion, cream cheese in a bowl

layer: Noodles, cheese mixture, meat mixture, noodles, cheese mixture, meat mixture, top with mozzarella and cheddar cheese.

A fun add in is Jalapenos. I also like to top it with chopped black olives, tomatoes or green onion before baking!

Bake @ 350 for 30-35 minutes.

I normally serve with Garlic Bread and mixed steamed veggies.
